Yes, this family has made the commitment to better health. We have gotten moving and become more active. Our eating habits have been completely transformed, no bread or and only natural sugars from complex carbs. It is working. We are all dropping the pounds. My hubby is down 21 pounds, my son has lost 10, and I am down a big 30. With all that being said, sometimes you need to give yourself a treat. That is exactly what we plan to do for our cheer dad Valentine’s Day morning. If my husband could only have one thing to eat the rest of his life it would be French Toast. His favorite happens to be my homemade decadent recipe. The girls and I wanted to take my tried and true French Toast to the next level. After lots of great ideas, all three of us decided that an addition of strawberries would be absolutely yummy. Off to the kitchen we went, determined to make our original toast epic. I have to say we succeeded. Our Strawberry French Toast will put a smile on Nathan’s face this Friday morning.
VALENTINE’S DAY STRAWBERRY FRENCH TOAST
1 loaf of day old bread
1/2 cup of half and half
1/4 cup of orange juice
6 strawberries (finely chopped)
2 tsp vanilla extract
2 TBS sugar
Butter for grilling toast
Sliced strawberries and powdered sugar for serving
Cut bread in 2 inch slices. In large mixing bowl, combine eggs and half and half and whisk until well combined. Add the orange juice, strawberries, vanilla extract, and sugar and continue to whisk ingredients until well blended. (there will be some lumps from the strawberries)
Immerse each slice of bread in egg mixture, making sure that the entire slice of bread is saturated with mixture. Continue until all slices have been dunked.
In a non stick frying pan on medium high heat, place about a TBS of butter in pan and allow to melt. Place the slice in pan and allow to brown in about four to five minutes toast should be browned, flip toast and brow the other side. Serve warm. Garnish with sliced strawberries and powdered sugar.
